Actually more like I had a day from hell and forget to take meat out the freezer eats.
I forgot to take pics, but it was soooooo good so I have to tell yall what I did.
I seasoned tilapia with chili powder, cumin, cilantro, salt, and pepper. I drizzled some evoo on top and baked the fish covered with foil for 25 minutes in a 325° oven. While the fish was cooking I made what I am calling no-heat salsa and some tartar sauce. The no-heat salsa was simply chopped tomato and onion with lime juice and cilantro. For the tartar sauce I mixed mayo and miracle whip (hubby likes one and I like the other), lemon juice, Zatarain's crab boil seasoning, minced garlics, and relish. I fried up some corn tortillas and threw everything in the taco and it was freaking amazing.
In the future I'm sure I'd kick this up a notch, but I was working with what's in my fridge. I'll definitely be making this again, even if just to take a darn picture :)
